Make 1 large galette or divide the pastry dough into 4 small galette’s. This recipe is easy to make and everyone will be asking for more!

Cranberry & Caramelized Onion Galette with Brie Cheese
serves 4

Pastry:
1 ¼ cups all-purpose flour
¼ teaspoon table salt
8 tablespoons cold unsalted butter, cubed
¼ cup plain yogurt or sour cream
2 teaspoons fresh lemon juice
¼ cup ice water

Filling:
1 medium onion, sliced
2 tablespoons butter
4 sage leaves
½ cup Oregon Growers Cranberry Pear Jam
4 ounces Brie Cheese, cold and thinly sliced

Glaze:
1 egg yolk with 1 teaspoon water

In a large mixing bowl, combine flour and salt. Cut in cubed butter until the mixture forms small pea like size. In a small bowl, stir together yogurt, lemon juice and water. Combine this mixture to the large bowl, stir with a wooden spoon forming the dough into a large ball . Cover with plastic wrap and place in the refrigerator for 1 hour.

Thinly slice the onion. In a medium pan, melt the butter over medium heat. Add the onions and occasionally stir for 20 minutes. Once onions begin to soften, add the sage leaves. Continue to cook until the onions begin to turn golden.

Preheat the oven to 400 degrees.

Remove the dough and place on a lightly floured surface. Roll out the dough into a 12” round. Transfer the disc onto a parchment paper lined baking sheet. Spread ½ cup of cranberry pear jam over the dough, leaving a 2” border. Place thinly sliced brie cheese over the jam and top with caramelized onions. Add 2 sage leaves to the middle. Fold the border over the filling, pleating the edges. Brush the crust with the egg glaze and bake for 30-40 minutes until golden brown. Remove and let cool slightly before slicing.
