Peach, Huckleberry, Wild Blackberry Honey, and Blue Cheese Bruschetta

The fruit in Hood River, OR is pouring out of every corner in town! The summer heat has made most everything early! Be sure to go to your favorite fruit stand before all the fruit is gone. We went and picked up some peaches and other produce at the local, Gorge Grown Farmers Market here in town and decided to whip up a quick recipe! We are lucky to live in a town that has such great farmers, creameries, breweries, bakeries, restaurants and so much more. Thank you to all the hard working people in this town that make it such a great place to live!

Makes: ~ 5-6 cups of Bruschetta 

2 ea   Ripe Peach, medium in size, diced

1 ea   Ripe Medium Tomato, diced

1 C    Huckleberries

¼ ea Red onion, Diced

½ ea Jalapeno, minced

½ ea Green Pepper, Diced

2 T Oregon Growers Wild Blackberry Honey, plus extra for drizzle

1 ea Lime, juiced and zested

½ C Basil, Chopped

⅛ C Cilantro, Chopped

1 ea Loaf of your favorite bread, grilled or broiled

TT Sea Salt

TT Pepper

Cascade Creamery Glacier Blue Cheese, Crumbled

  1. Mix all of the ingredients together except bread and blue cheese in a bowl.
  2. Season with salt and pepper to taste.
  3. Grill or broil bread.
  4. Top slices of bread with bruschetta, crumble with blue cheese, and drizzle with Wild Blackberry Honey.
  5. Finish with chiffonade of basil and picked leaves of cilantro.
  6. Enjoy!
